How do I make soup from scratch?

Soften vegetables, add stock and simmer, then blend or leave chunky.
Homemade soup is easy and a great way to use up vegetables. The basic method is the same for most recipes.
Good stock makes better soup.
Method
Soften chopped onion, carrot and celery in oil, add garlic and spices, then add the main vegetable and enough stock to cover. Simmer until tender.
Blend or leave chunky
Blend with a stick blender for a smooth soup, or leave it chunky. Add cream or a splash of milk if you want it richer.
Finish
Taste and adjust the salt, add lemon juice or herbs, and serve with bread. Cool and freeze extra portions.
