How do I cook dried beans and lentils?

Soak beans, boil them thoroughly and simmer until tender; lentils need no soaking.
Dried beans are cheap and nutritious, but they need soaking and proper cooking. Lentils cook faster and usually need no soaking.
Always rinse and check for small stones first.
Beans
Soak overnight in plenty of water, drain, cover with fresh water and simmer for 1 to 2 hours until tender. Kidney beans must be boiled vigorously for at least 10 minutes first, because raw or undercooked ones contain a toxin.
Lentils
Rinse and simmer for 15 to 25 minutes, depending on type.
Seasoning
Add salt toward the end or once soft if you find they stay firm. Cook a big batch and freeze portions.
