How do I make bread at home?

Flour, water, yeast and salt make a simple loaf; kneading and proofing do the rest.
Basic bread needs just flour, water, yeast and salt. Patience matters more than skill, because the dough does most of the work while it rises.
Use fresh yeast and warm, not hot, water.
A simple loaf
Mix 500 g strong bread flour, 7 g instant yeast, 10 g salt and about 325 ml lukewarm water. Knead for 8 to 10 minutes until smooth and stretchy.
Rise and shape
Cover and let it rise until doubled, about 1 to 2 hours. Shape it, let it rise again for 30 to 45 minutes.
Bake
Bake at about 220 °C for 30 to 35 minutes. The loaf is ready when golden and it sounds hollow when tapped underneath.
