How do I cook a steak?

Pat dry, season, use a very hot pan and rest the meat after cooking.
A good steak needs a dry surface, a hot pan and a rest after cooking. Thicker cuts give you more control over how it is cooked inside.
Take the steak out of the fridge about 30 minutes before cooking.
Steps
Pat the steak very dry and season generously with salt and pepper. Heat a heavy pan until very hot with a little oil. Sear for 2 to 4 minutes per side, adding butter and herbs towards the end.
Doneness
As a rough guide, medium-rare is about 55 °C and medium about 60 °C in the centre. Guidelines vary, so use a thermometer and follow your local food safety advice.
Rest
Rest the steak for 5 to 10 minutes, then slice against the grain.
