How do I make pancakes from scratch?

A simple batter of flour, milk, egg and baking powder makes fluffy pancakes in minutes.
Pancakes need only a few pantry ingredients. Do not overmix the batter, or they will turn out tough.
This makes about 6 to 8 small pancakes.
Ingredients
125 g (1 cup) plain flour, 1 tablespoon sugar, 2 teaspoons baking powder, a pinch of salt, 1 egg, 240 ml (1 cup) milk and 2 tablespoons melted butter.
Method
Whisk the dry ingredients, then add the wet ingredients and stir until just combined, leaving a few small lumps. Rest for 5 minutes.
Cook
Heat a lightly greased pan over medium heat. Pour in batter and cook until bubbles form and the edges look set, then flip and cook for another minute.
