How do I make a simple tomato sauce?

Gently cook onion and garlic, add tomatoes and simmer until thick.
A good tomato sauce is cheap, quick and freezes well. Start with good tomatoes, tinned or fresh.
Do not rush the simmering, because that is where the flavour develops.
Basic method
Soften a chopped onion in olive oil, add garlic for a minute, then add a tin of chopped tomatoes with salt, pepper and a pinch of sugar if the tomatoes are sharp.
Simmer
Simmer gently for 20 to 30 minutes until thickened. Add basil or oregano and a splash of olive oil at the end.
Variations
Add chilli for heat, vegetables for body, or blend for a smooth sauce. Store in the fridge for 3 to 4 days or freeze.
