How do I cook salmon?

Cook salmon gently until it flakes, and avoid overcooking.
Salmon cooks quickly and is best when it is just opaque and flakes easily. It is easy to overcook, so keep an eye on it.
Pat the fillet dry and season before cooking.
Pan-fry
Start skin-side down in a hot, lightly oiled pan for 4 to 5 minutes, until the skin is crisp, then flip for 1 to 3 minutes.
Bake
Bake at about 200 °C for 10 to 15 minutes, depending on thickness.
Check doneness
It should flake easily with a fork. Many food safety guides recommend 63 °C (145 °F) in the thickest part. Some cooks prefer it slightly lower, but pregnant women and vulnerable people should follow official advice.
