Lesson 1
The Foundation of Flavour
Build a flavour base using aromatics and high-quality stock.
The Mirepoix
Every great soup starts with a flavour base. Heat 2 tablespoons of oil or butter in a large pot over medium heat. Add finely chopped onion, carrots, and celery. Cook these until they are soft and translucent, which takes about 8 to 10 minutes. Do not rush this step, as it creates the primary flavour profile for your soup. ## Stock Selection Once the aromatics are softened, add your main vegetable—such as squash, cauliflower, or potatoes—and enough stock to just cover the ingredients. High-quality vegetable or chicken stock acts as the backbone of your dish. If using stock cubes, check the sodium levels to avoid over-salting later. Bring the mixture to a gentle boil, then immediately turn the heat to low. Allow it to simmer until the main vegetable is completely tender when pierced with a sharp knife or fork.
