Lesson 1

Selecting and Preparing Grains

Understand why rinsing is essential for preventing gummy or sticky textures during the cooking process.

Wash away starch. Before heating your pan, place the rice in a fine-mesh sieve and run cold water through it. Agitate the grains until the liquid transitions from cloudy white to clear. This removal of excess surface starch is the primary factor in preventing a clumpy, gluey mess. Once clean, drain thoroughly to ensure your water-to-grain ratio remains exact. A standard starting ratio is 1:1.5, meaning for every 200g (1 cup) of dry rice, you use 300ml (1.5 cups) of fresh water. Never guess your measurements; use a measuring cup for the liquid and a digital scale for the grain. By standardising your input, you eliminate the variable of excess moisture, which is the most common reason for failure. Aim for consistency across every batch you prepare, treating the preparation phase as a mandatory step for long-term culinary success.
