Lesson 1
Grip and Stability Basics
Establish a safe foundation by ensuring your cutting surface is stable and your grip is firm.
The Stable Board
If your board slips, your knife slips. Place a damp paper towel or a non-slip silicone mat under your wooden or plastic board to lock it into place. A secure board is the most vital safety requirement in any professional or home kitchen.
The Proper Grip
Do not hold the handle like a hammer. Instead, pinch the base of the blade with your thumb and index finger, wrapping the remaining three fingers firmly around the handle. This 'pinch grip' provides superior control and prevents the knife from wobbling during slicing.
Maintenance
A sharp knife is safer than a blunt one. A blunt blade requires excessive force, increasing the risk of the tool slipping off the vegetable and hitting your hand. Regular honing with a steel and professional sharpening will keep the edge effective and reliable for daily use.
