Lesson 1

The Science of Boiling

Master the timing for jammy and hard-set yolks using a consistent boiling water method.

Timing the boil. To achieve a soft, jammy yolk, lower your room-temperature eggs into boiling water and cook for 6 to 7 minutes. For a fully firm hard-boiled egg, extend the time to 10 to 12 minutes. The secret to success lies in the immediate transfer to an ice bath once the timer sounds. Prepare a bowl with cold water and ice cubes before you begin cooking. This thermal shock stops the cooking process immediately, preventing the dreaded green ring around the yolk caused by over-denaturation. Peeling is simplified by the sudden contraction of the egg inside the shell during the ice bath. Crack the shell gently against your counter and peel under a cold running tap, allowing water to get between the membrane and the white. This technique ensures a smooth surface every time you peel.
