Lesson 1
Soaking and Safety Basics
Understand the necessity of soaking beans and ensuring safety for specific varieties.
Preparation
Start by spreading your dried beans on a tray to inspect for small stones or debris. Rinse them thoroughly under cold running water. For most beans, soaking is essential for even cooking and improved digestion. Place them in a large bowl, cover with water by 5cm (2 inches), and leave them for 8 to 12 hours. Drain and rinse before cooking. ## Safety Rules Safety is paramount when cooking red kidney beans. They contain a natural toxin that must be neutralised. Always bring soaked kidney beans to a rolling boil for at least 10 minutes before reducing the heat to a simmer. If you skip this boiling phase, the toxin remains active, which can cause severe digestive distress. Always monitor your heat carefully during this initial phase to ensure the water maintains a vigorous bubble before you lower the temperature for the long cook.
