Lesson 1

Understanding Egg Replacements

Use flax and fruit to replicate the binding and moisture properties of eggs.

The Role of Eggs

Eggs perform specific roles: they bind ingredients, provide moisture, and assist with structural rise. When you need a substitute, you must consider what the recipe requires. For binding in muffins or dense breads, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water. Let this sit for 5 minutes until it becomes a gel-like consistency. ## Fruit Alternatives For recipes requiring extra moisture, such as cakes or moist brownies, replace one egg with 60g (a quarter cup) of unsweetened apple sauce. Avoid overusing this substitute, as it can make the final result too dense if the recipe requires significant lift. Neither of these substitutes will work for recipes that rely on eggs for aeration, such as soufflés, meringues, or sponge cakes that contain no chemical leavening agents like baking powder. Always test these swaps in simple, forgiving recipes before applying them to your favourite complex creations.
